CHICKEN AND DUMPLINGS. The very name invokes images of family times, laughter, and full tummies. Comfort food, that’s what it is! For centuries around the world, dumplings have existed in some shape or form. Being a Southern company with Southern cooks at the helm, we STAND OUR GROUND in declaring that dumplings are flat rolled out strips, or squares of dough not dough balls dropped in broth that resembles undercooked biscuits. And besides that, here in Eastern North Carolina we call this popular dish “Chicken Pastry”. There has been many a debate over what these thin pastry strips cooked with chicken are really called. While we call it chicken pastry or chicken and dumplings, you may call it chicken slick, chicken pot pie, slippery dumplings, noodles, or simply rolled dumplings. Now we all know that no matter what kind of dumplings we grew up eating, Grandma’s were always the best. Sitting at her table waiting for that steaming bowl of mouthwatering goodness to be spooned out on our plate was akin to waiting for Christmas Eve. Believe it or not, we have grandmas who write us saying they would rather spend time with their grandkids and leave the dumpling making to Anne. And yes, there really is an Anne. Next time you sit down at Grandma’s table for a meal of chicken and dumplings, don’t be surprised if in her kitchen you won’t find Anne’s familiar red and yellow box.
